Kids eat seaweed

How important is it to us that our kids eat a healthy diet? Very, however this can be a challenge at times. Many children are reluctant to eat vegetables, or prefer sweets and snacks instead of healthy food. So, how can we enrich their diets with greens such as seaweed, which contains vitamins, minerals, proteins and antioxidants? Here are a few ideas:

Everyday recipes to include Seakura seaweed in dishes kids love

“Mermaid Omelette”

Ingredients:

Preparation:

  1. Beat the eggs together with the seaweed cubes, the salt and pepper
  2. Pour into a hot pan with a drop of oil
  3. Lightly fry and flip over until the omelette is cooked. Serve hot.

CHAMPION FALAFEL BALLS

Ingredients for 15 balls:

  • 1 cup frozen or dried chickpeas
  • 6-8 cubes Seakura seaweed
  • ¼ bunch parsley
  • ½ an onion
  • 2 cloves garlic
  • 1 tbsp raw tehina
  • 1 tbsp olive oil
  • ½ a hot pepper (not compulsory)
  • Salt, fresh-ground black pepper

Preparation:

  1. Rinse and drain the chickpeas, place in the food processor, grind finely until mixed, place in a large bowl.
  2. Mix the remaining ingredients in the processor, until uniform. Add to the chickpeas in the bowl and mix well.
  3. Heat oven to 200 degrees.
  4. Form balls from the mixture and place on a baking tray lined with baking paper. If desired, a bit of olive oil may be brushed on for colour and crispness.
  5. Bake in a hot oven for 15 minutes, or until brown and crisp. Serve hot.

VEGETARIAN AND VEGAN-FRIENDLY ROSE SAUCE

Ingredients:

  • 1 tomato
  • 1 tin crushed tomatoes (preferably preservative-free)
  • 1 grated onion
  • Handful of finely chopped basil leaves
  • 3 cubes Seakura seaweed
  • 1 package coconut water
  • Ground black pepper
  • Sea salt
  • 1 tbsp olive oil

Preparation:

  1. Heat up a pan and add the olive oil. When hot, add the chopped tomato and the grated onion.
  2. Add the crushed tomatoes and the coconut water and mix until boiling.
  3. Add seaweed, basil, salt and ground pepper.
  4. Serve on fresh pasta, gnocchi or ravioli
